Happy Valentines day!

I personally love this day, because I love, love. And, honestly everyone that seems to have a problem with it usually never does anything special for others on regular days so I think it’s time for them to look in the mirror. Nothing has to be commercial unless you make it so!

Any of your who have followed along probably already know how I met my partner. I knew I absolutely needed a beautiful story, and I’m so glad I got one. Traveling to Belfast and having this lovely Australian boy check me into the hostel was one the best things I ever did. The travels we’ve gone on so far make me smile so much, and we’ve got so many more in the works! I am so thankful that we made long distance work by turning it into part of the adventure.

This year today swung up on me a bit quickly and I realised I needed to make something easy and pretty. And if you’ve run out of time as well these sweet little cookies are super easy and look lovely. But, I hope no matter what you make is filled with lots of love, and whoever receives it, gives you that smile that reminds you why Valentines day is beautiful.

Cookies

-2 cups spelt flour
-1 softened browned butter
-1/4 cup honey*
-1/4 tsp salt
-Organic raspberry Jam**

-Begin browning the butter by melting it slowly in a small saucepan over medium heat. Swirl the pan occasionally as it begins to foam. Once it turns to a lovely brown colour and has a nutty aroma, pour it into a heat proof bowl and let it cool till it is hardened slightly.
-Preheat the oven to 350 degrees and grease or line a baking pan.
-Once the butter has hardened up a bit, whip it with the honey with a stand or hand mixer until it it thoroughly combined.
-Next add the flour and salt in two batches until it forms a wet dough.
-With wet hands, scoop out small amounts and roll them with the palm of your hands, and then careful flatten them till you get an even disk.
-Using whichever finger fits best, create a heart shape by imprinting twice on opposite angles.
-Carefully pour a small amount of jam in until the heart is just filled.
-Bake for 12-15 minutes until browned on the bottomed.

*You can alternatively use maple syrup, or yacon even!
**If you haven’t got jam on hand you can easily cook down any fruit you have until thick and let cool before placing in cookies.
