I feel like I’m constantly excusing myself for not posting on here frequently enough, but I know in reality I should be apologizing to myself. Because it really just means I haven’t been making enough time for me. I’m out of excuses though, I’ve cut my work hours back and now I have more time to concentrate on my own personal projects! Today was my first extra day off and oh my god its been glorious. Just having more time away from my job that I don’t love is bliss. This is the start to a new beginning for me, keep your eyes out for plenty more!

So far this summer has been an absolute dream. Swimming, eating, patios and endless summer nights…I could go on and on. And having my partner here and getting to spend time with my close friends is beyond nice. I love summer! Everyone is so happy and excited for any chance they get to relax. I wish people would carry that feeling with them year round.

I don’t love this heat though. As you may have figured out already I am more of an overcast and cool sort of girl so this over 30 weather every day has been a bit more than hard.But, it does have its perks. Like frozen raw treats that totally make this blistering sun a little bit more worth it. And let me tell you, these bars are super easy, quick and satisfying for when you need something cold. I even tucked some extra greens in there! You can let them thaw out and eat them soft, or fresh from the freezer so it will help bring your temperature down a little. So here’s to the heat and anything that will help you survive it!

Basil Layer

3 cups soaked cashews
2 tbsp melted coconut oil
1/3 cup maple syrup
1/2 cup water
1 tsp vanilla
1/2 cup loosely packed basil leaves
1 cup spinach
pinch of salt

Blueberry Layer

1 1/2 cups soaked cashews
1 1/2 cup blueberries
2 tbsp melted coconut oil
1/4 cup maple syrup
1 tsp vanilla
1/2 cup water

-Line a 8×8″ pan
-For the basil layer, add everything to the blender or food processor and blend until smooth and creamy. If it is too dry you can add a bit of water until it is a bit more pour able.
-Pour into pan and flatten evenly with a spatula. Place in freezer to set for at least 20 minutes.
-For the blueberry layer, again place everything in the blender and blend until creamy, adding water if necessary. Pour over the basil layer and use the spatula to even out.
-Freeze for around an hour before cutting it into squares and enjoying nice and cold!
